Asian Lettuce Wraps

This is a homemade version of the Lettuce Wraps commonly found at chain Chinese restaurants (P.F. Chang's, Stir Crazy, etc.). Embrace the messiness.

Ingredients

lb ground chicken or turkey breast

onion, minced
salt & pepper

garlic cloves, minced

tbsp ginger, minced

tbsp soy sauce

tbsp + 1 teaspoon rice vinegar

tbsp sesame oil (do not omit!)

tbsp peanut butter
1/2
tbsp water
1/2
tbsp honey
1/2
tsp hot sauce

green onions, chopped
8 1/2
oz can sliced water chestnuts, drained and chopped
1/4
cup peanuts, chopped
10-12
large outer lettuce leaves, rinsed and patted dry
Directions

Heat a large, non-stick skillet on high. Add chicken/turkey, onion, salt, and pepper, then cook until meat is mostly browned, stirring often to break it up. Add garlic and ginger, then continue until meat is no longer pink.

Meanwhile, in a microwave safe bowl, combine soy sauce, rice vinegar, oil, peanut butter, water, honey, and hot sauce. Microwave for 20 seconds, then stir until smooth. Add into the skillet and stir to combine.
3.
Add green onions and water chestnuts and cook for 1-2 minutes until the onions are soft and the water chestnuts are heated through. Sprinkle with chopped peanuts, and serve with cold lettuce leaves.
