Cajun Style Blackened Fish

This recipe works well with Catfish, Tilapia, Snapper, Cod or Halibut

Ingredients

tsp salt
1
tsp thyme
1/2
tsp oregano
1/2
tsp cayenne pepper
1/2
tsp paprika
2
tbsp Olive oil
4
(6 oz) fillets
Directions
1.
Preheat oven to 400. Mix spices in a small bowl. Place fish fillets on parchment paper lined baking sheet. Brush both sides with 1 T Olive oil. Sprinkle top of each fish with seasonings.

Heat heavy cast iron skillet over high heat until very hot,
3.
Add remaining 1 T of Olive oil, swirl to coat skillet.
4.
Place fillets, seasoned side down in skillet. Cook until very brown on bottom, about 1 minute only
5.
Return fillets, browned side up to baking sheet. Place in oven and bake until just opaque in center, 8 minutes.
6.
Remove from oven immediately and serve right away.
