Green Chili Chicken Enchiladas

Tired of dry enchilada's that make your mouth feel like the Sahara desert? I have the solution....flour tortillas and green chili sauce to the rescue. Read on for a easy, quick mouth watering meal!

Ingredients
10-12
Flour Tortillas or Cassava Tortillas (Soft Taco Size Mission Tortillas or Siete Brand (Cassava)
1-2
cans Las Palmas Green Chili Sauce
1
Rotisserie Chicken (Smart and Final or Costco brand are perfect)
1
lb shredded Jack Cheese (or shredded goat cheese from Trader Joes)
1
bunch chopped cilantro
Non stick spray
Directions
1.
Preheat oven to 350
2.
Add Sauce to a pan and heat on low, adding handfuls of chopped cilantro
3.
Heat tortillas up in the microwave or over the stove (so they don't break)
4.
Shred chicken and season with salt and pepper
5.
Once sauce is heated, add sauce, chicken and cheese to tortilla and roll up (1-2 tbsp of ea., More if desired)
6.
Spray casserole dish and lay in each enchilada once rolled
7.
Once dish is filled, cover with sauce and cheese and bake until cheese is melted
