Meaghan's Carrot Ginger Soup

bag of carrots

white onion

tsp minced garlic
1
quarter block of butter
3
tsp of minced ginger
1
box chicken stock
1
can coconut milk
1
sour cream
Directions

prep:

peel and chop bag of carrots
3.
chop onion
4.
mince garlic
5.
mince ginger

cook:

in a large frying pan, fry onions garlic and ginger in butter until soft and brown
8.
meanwhile, boil carrots in a large saucepan
9.
purree frying pan mixture with 1 cup of chicken stock
10.
purree soft boiled carrots with 2 cups of chicken stock
11.
mix two mixtures together and add 1 cup of coconut milk
12.
bring to boil in large saucepan
13.
let simmer and serve with 1 tbsp of sour cream on each bowl
