Medley Muffins

These healthy and tasty muffins are delicious anytime!

Ingredients

tbls olive oil

cup honey or sugar

cup pumpkin puree
1/3
cup milk
1/2
cup applesauce
1
or 2 ripe bananas
1
egg
1
tsp pumpkin pie spice
1 1/2
cups wheat flour
1
tsp salt
1
tsp baking soda
1/4
cup flax seed powder
1
cup oatmeal
1/2
cup chopped almonds or walnuts
1/2
cup chocolate chips (optional)
Directions
1.
Preheat oven to 350 degrees F. Prepare 18-22 muffin tins with paper cups, or lightly grease.
2.
In mixing bowl, mix together the first eight ingredients until combined.
3.
Slowly add in the dry ingredients and mix well.
4.
Pour the mixture into the baking cups, so that each is about 2/3 full.
5.
Bake for about 20-22 minutes, or until a toothpick inserted in the center comes out clean.
6.
Let cool for a few minutes, and serve.
