Lasagna Soup

I originally found this on Pinterest and it is so yummy!

Ingredients

tbls olive oil
1 1/2
lb ground beef
3
chopped onions
4
cloves garlic, minced
2
tsp dried oregano
2
tbls tomato paste
28
oz fire roasted, diced tomatoes
6
cups chicken broth
8
oz Mafalda pasta
1/2
cup grated Parmesan cheese
8
oz Ricotta cheese
2
cups shredded Mozzarella cheese
1
tsp salt and pepper
Directions
1.
Heat olive oil in a large pot over medium heat.
2.
Add ground beef, breaking up into bite sized pieces and onions and cook with water until browned, about 10 minutes.
3.
Add garlic and oregano. Cook for 1 minute. Add tomato paste and stir well to incorporate.
4.
Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.
5.
Add diced tomatoes and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes.
6.
Cook pasta separately until al dente.
7.
While the pasta is cooking, prepare the cheesy yum: in a small bowl, combine the Ricotta, Parmesan, salt, and pepper.
8.
To serve, fill a noodle with the cheesy yum in each soup bowl and ladle the hot soup over the cheese. Sprinkle with mozzarella cheese.
