12 Grain Bread

Growing up, my mom would always make us this yummy 100% whole grain bread.

Ingredients

cup 9-grain cracked cereal
1/3
cup millet
1/4
cup sesame seeds
1/4
cup flax seed powder
1/2
cup sunflower seeds
1/4
cup vital wheat gluten
3
cups very warm water
1/3
cup honey
1/3
cup olive oil
1
tbls salt
2
tbls yeast
7 1/2
cups freshly ground, whole wheat flour
1 1/2
tbls dough enhancer
Directions
1.
Measure the first eight ingredients into the Bosch mixer. Add enough flour to make a pancake consistency. Let sit for 20 minutes.
2.
Add honey, oil, salt and mix together.
3.
Add whole wheat flour slowly until mixture cleans sides of bowl. Knead 7 minutes.
4.
Add dough enhancer. Knead 2 minutes.
5.
Let rise in oiled, covered bowl for one hour.
6.
Punch down. Put in loaf pans. Let rise 45 minutes to an hour.
7.
Bake at 350 degrees for 30 minutes.
