Coconut Rice

Delicious South Indian recipe, and a great way to use leftover rice.

Ingredients
4
cups cooked long grain rice
2
cups grated coconut
1
tsp mustard seeds
2
tsp split black gram
2
tsp split bengal gram
1/2
tsp asafoetida
4
green chillies chopped
2
red chillies roughly broken up
4
tbsp butter or ghee
Few curry leaves
Salt to taste
handful fresh cashew nuts
Directions
1.
Heat butter/ghee on a medium heat in a large pan for about 2 minutes.
2.
Add the mustard seeds and fry till they splutter.
3.
Now add the grams, red chilli pieces, and asafoetida, and fry for a few seconds till the gram turns light brown.
4.
Add the chopped green chillies, curry leaves, and the grated coconut. Saute on medium/low heat for about 4 minutes until the coconut is light brown in colour.
5.
Add the rice and salt to the mixture and miz well. Keep on low heat for 2 minutes.
6.
Garnish with fried cashew nuts.
