Father's Day Salmon

A dish I made for my father on Father's Day, inspired by his love of fish. He was a fan.

Prep
Cook
Serves 2people
Ingredients
2
6-8 oz salmon
2
stalks of corn
1/4
cup Red Pepper (diced)
1/4
cup Green Onions (diced - keep separate green and white parts)
1
tbsp olive oil
some extra olive oil
2
tbsp rice vinegar
6
strips of bacon (cut in 1/2 inch pieces)
cayenne pepper
salt
black pepper
Directions
1.
Preheat Oven to 450 F
2.
In a skillet, cook bacon until brown and crispy (8-10)
3.
Cut off corn off the husk into a small bowl.
4.
Turn on low, add red pepper and the white portion of the Green Onions. Allow to cook for 2-3 minutes, then add corn and a small portion of the green part of the Green Onions. Add in salt, pepper, and cayenne to taste. Leave on low.
5.
Slather salmon with olive oil, and add salt, pepper, and cayenne to taste. Bake in the oven for 12-15 minutes.
6.
Once salmon is taken out, add the garnishes on top, lightly sprinkling with the leftover green onion pieces.
