Hash Brown Omelet Burrito

This is a quick way to have a full breakfast on the run

Ingredients

8" flour Tortillas
2
Large Eggs
1/2
cup Frozen shredded potatoes
1/8
cup Chopped bell pepper (I use frozen)
1/8
cup Chopped onion (I use Frozen)
3/4
cup Shredded Cheddar Cheese

Pre-cooked Sausage links chopped
Salt to taste
Pepper to taste

tbsp Butter
Directions

In a 8 inch skillet melt butter. Add shredded potatoes, bell peppers, and onion. Stir occasionally until potatoes begin to brown. Stir in sausage. Allow to brown up the bottom of the potatoes. Flip and allow bottom to brown. Break up the potatoes and add the eggs and cheese. Mix everything together well. Flatten out the top and allow to cook until egg begins to set and bottom is nice and brown. Flip and allow for the other side to brown up. While you are browning this side cover with the tortillas to steam and heat them. Flip tortillas part way through. Remove tortillas to a work surface. Place half of the potato omelet on the center of each tortilla. Wrap the tortillas into burritos and place back into pan to brown and crisp each side. Serve with salsa and sour cream or eat plan on the run.
