Bruschetta Chicken

Ingredients
1/2
cup flour
1/2
cup egg substitute
4
boneless, skinless chicken breast halves (approx. 1 lb.)
1/4
cup grated parmesan cheese
1/4
cup dry bread crumbs
1
tbsp melted butter
2
large tomatoes, seeded & chopped
3
tbsp minced, fresh basil
2
garlic cloves, minced
1
tbsp salt
1/4
tsp pepper
Directions
1.
Place flour & eggs in separate shallow bowls.
2.
Dip chicken in flour, then eggs, place in greased 9x13 pan.
3.
Combine parmesan, bread crumbs & butter. Sprinkle over chicken.
4.
Loosely cover pan with foil. Bake at 375 degrees for 20 min.
5.
Uncover, bake 5-10 minutes longer until top is browned.
6.
Meanwhile, combine remaining ingredients. Spoon over chicken. Return to over for 3-5 minutes or until tomato mixture is heated through.
