Kate's Beef & Noodles

Ingredients
2
lb bread & butter pot roast
1
pkg. reames frozen egg noodles
mashed potatoes
beef bullion cubes or beef broth
1
small yellow onion, sliced
1
stick of real butter
Directions
1.
Cook pot roast in 2 c. beef broth for 1 hr on high in crock pot (place sliced onion over roast during cook time in crock pot), turn to low for 4 more hours.
2.
Remove roast from broth & shred.
3.
Keep broth and combine with 1 1/2 quarts of additional broth & cook egg noodles for 20 minutes (bring broth to a boil before noodles are added).
4.
Strain noodles, keep broth. Melt butter into noodles.
5.
Add beef, noodles and broth back to crock pot and serve over mashed potatoes.
6.
(*To make broth - use 1 beef bullion cube per 1 c. of water or substitute beef broth)
