Strawberry Spinach Salad

Ingredients

tbsp white wine vinegar

cup sugar

tbsp vegetable oil

tsp poppy seeds

cup sliced natural almonds (toasted)
8
ozs (1.5 cups) strawberries
1/2
medium cucumber, sliced and cut in half
1/4
small red onion, sliced into thin wedges
Directions
1.
For dressing, zest lemon to measure 1/2 tsp zest. Juice lemon to measure 2 tbsp juice.

Combine zest, juice, vinegar, sugar, oil and poppy seeds in a small bowl. Whisk until well blended.

Cover; refrigerate until ready to use.

Preheat oven to 350.
5.
For salad, spread almonds in single layer over bottom of small bar pan.
6.
Bake 10-12 minutes or until lightly toasted. Remove from oven; cool almonds in pan.
7.
Hull strawberries; cut into quarters.
8.
Score cucumber lenghtwise using zester; remove seeds.
9.
Slice cucumber, cut slices into half.
10.
Slice onion into thin wedges.
11.
Place spinach in large serving bowl; add strawberries, onion, cucumber.
12.
Whisk dressing; pour over salad, gently tossing to coat. Sprinkle with almonds.
