Original Keto Granola

Ingredients

cup Pecans
1/2
cup Almonds
1/4
cup Pumpkin seeds
2
tbsp Flax seed
1/4
cup Unsweetened coconut shreds
2
tbsp Lakanto drinking chocolate
Monkfruit Sweetner to taste
1
egg white
1
tbsp MCT oil
1 1/2
tbsp Butter
1
tsp Vanilla
Directions
1.
Preheat oven to 300
2.
Add dry ingredients in one large bowl (nuts, seeds, drinking chocolate powder, coconut) - chop up larger nuts
3.
Add wet ingredients to a smaller bowl (egg white, MCT oil, butter, vanilla) mix well
4.
Pour the wet ingredients over the dry ingredients and mix until combined and everything is moist
5.
Spread on parchment lined baking pan into a flat sheet of granola
6.
Bake for 20-25 mins until golden brown
7.
The granola will still feel slightly soft when you pull it out of the oven; it will harden as it cools
8.
Once cool, use your hands to break up the granola sheet into bite sized chunks, and store in sealed container
