Bell Pepper Bruschetta

Ingredients
1/4
cup olive oil
2
bell peppers - seeded and chopped
1
small yellow onion- chopped
2
cloves minced garlic (or pre-packaged kind that stores in the fridge)
1/2
cup part-skim ricotta cheese
1/2
cup chopped basil
hot pepper sauce (optional)
baguette/french bread
Directions
1.
In a skillet, heat olive oil over medium heat.
2.
Add chopped bell peppers (any color you like), onion and minced garlic. Cook and stir until soft and lightly caramelized, about 10 minutes.
3.
Transfer pepper mixture to a food processor; add ricotta cheese, fresh basil and a few dashes of hot pepper sauce. Cover and puree until smooth.
4.
Spread on toasted baguette slices. Approx 2 tbsp mixture per slice.
