Ratatouille

This vegetarian dish is healthy and flavorful.

Ingredients

tbls water
1
tbls olive oil
1/3
cup chicken broth
1/4
tsp salt

oz tomato sauce
1/2
tsp basil
1/2
tsp oregano
1
yellow squash
1
eggplant
1
zucchini
1
onion
3
cloves garlic, minced
1
cup couscous
Directions
1.
Chop all of the vegetables
2.
Drizzle olive oil in pan. Saute the squash, eggplant and zucchini together.
3.
Mix in a bowl the tomato sauce, onion and garlic.
4.
When the vegetables are tender and crisp, add the chicken broth. Cover for five minutes.
5.
Add the sauce and bring to a boil. Add the salt and seasonings and let simmer for five minutes.
6.
Make the couscous.
7.
Pour Ratatouille on top of couscous.
