Chicken Biriyani

Biriyani is a rice based dish, made with spices and your choice of meat. The name is derived from the Persian word 'beryan' meaning fried, roasted, and the dish was brought to India by the Mughals.

Ingredients

gr chicken

cups rice
2
onions
handful fried onion
5
cloves of garlic
1/2
in stick of ginger
2
green chillies
1
tomato

tsp yoghurt
handful coriander and mint leaves
bay leaf
pinch of cloves and cinnamon, cardamom and salt
1 1/2
tsp chilli powder
1
tsp turmeric powder
lime juice
Directions
1.
Make a curry mixture with the chicken, onions, garlic, ginger, green chillies, tomato, yoghurt, coriander and mint leaves, cloves, cinnamon, and chilli and turmeric powder.
2.
Wash and dry the rice, then fry with 3 cups of water in 1 tbsp of ghee and half cook for about 8 minutes with cinnamon, cloves, cardamom, salt and lime juice.
3.
Now line a baking tray with ghee, and layer with rice, curry mixture, fried onions, coriander, mint leaves and a bay leaf.
4.
Cover with foil and bake at 180 degrees for 25 minutes.
