Carrot Chutney

This delicious chutney goes perfectly with some freshly cut bread or cold meats and cheese.

Ingredients
4
carrots grated
1
tsp chilli powder
desiccated coconut (equal amount to carrot)
handful of curry leaves
small bits of ginger
1
clove garlic
2-3
chunks of tamarind
1
tbsp oil
Directions
1.
Fry the grated carrot in half a tablespoon of oil for a few minutes and then add the chilli powder.
2.
Remove from the pan and set aside.
3.
Fry the desiccated coconut in the remaining oil.
4.
When it is brown, add the curry leaves, ginger, garlic and tamarind.
5.
Place this mixture, and the pre-fried carrot into a food processor and blend.
