Fish Biryani

Biryani is a rice based dish, made with spices and your choice of meat. The name is derived from the Persian word 'beryan' meaning fried, roasted, and the dish was brought to India by the Mughals.

clove
4
black peppercorns

cup sliced onions
3
cups basmati rice
6
cups boiled water

tsp salt
for fish masala

gr King fish or seer fish
1
tbsp chilli powder
1/2
tsp turmeric powder
1
tsp salt
1
cup oil
3
sliced onions
2
tbsp ginger-garlic-green chilli paste
1
chopped tomatoes
1
tsp garam masala
1
tbsp yoghurt
1/4
cup thick coconut milk
1
cup chopped coriander leaves
2
tbsp chopped mint leaves
2
tbsp ghee
Directions
1.
Marinate fish pieces with chilli powder, turmeric powder and salt for 1 hour.
2.
Heat ghee in a pan and add cardamom, cinnamon, cloves and black peppercorns. Add onions and rice and fry for 5 mins. Pour boiled water and salt to taste, cook till done and keep aside.
3.
Fry the marinated fish pieces. Add sliced onions and fry on a low heat until it becomes slightly brown.
4.
On a medium heat add ginger-garlic-green chilli paste and tomato and stir for 6 mins.
5.
Add garam masala, yoghurt, coconut milk, coriander leaves and salt and stir for 5 mins.
6.
Add fried fish pieces and reduce the flame, cook till it starts to boil.
7.
Finally, take a deep vessel and layer rice and fish masala. Pour 2 tbsp ghee and tightly cover.
8.
Keep on a low flame for 10 mins, and then garnish with roasted nuts and raisins.
