Prawn Malai Curry

This creamy Bengali dish combines prawns with coconut milk, onion, ginger and garlic pastes, tomato, and freshly ground spices. Serve it with steamed basmati rice.

Ingredients
500
gr prawns
2
potatoes diced
2
onions finely chopped
2
tsp ginger paste
2
tsp garlic paste
1/2
tsp chilli powder
1
tomato chopped
2
cups coconut milk
1/2
tsp sugar
1
bay leaf
1
tsp garam masala
salt to taste
Directions
1.
Boil the prawns in 1 tbsp of water.
2.
Heat oil in a pan and fry potatoes till soft. Increase heat and brown potatoes slightly and keep aside.
3.
In the same oil fry garam masala, bay leaf, and onion till brown.
4.
Add tomatoes, ginger, garlic, and chilli powder and fry till raw smell disappears.
5.
Add potatoes and prawns and fry again for 1 min. Add coconut milk, sugar, and salt.
6.
Cover and simmer. The gravy should not be very thin and potatoes should be cooked.
7.
Add additional coconut milk if needed.
