Ac's Lemon Chicken With Roasted Potatoes

I think this is wonderful but Mimi will not eat. I guess you have to like lemon and rosemary!

Ingredients
4
chicken breast with bone in
4
small to medium baking potatoes
4
sprig fresh rosemary
1/2
cup fresh squeezed lemon juice
minced garlic
seasoned salt
lemon pepper
olive oil
Directions
1.
Preheat oven to 450
2.
Spray a roasting pan with Pam and place the chicken breasts in pan.
3.
Pour the fresh squeezed lemon juice over the chicken (should cover bottom of pan)
4.
Sprinkle chicken with minced garlic to taste and place a spring of rosemary on top of each breast.
5.
Sprinkle the Lemon pepper over the breasts.
6.
Slice potatoes thinly. Place in a zip loc bag and put olive oil to coat. Place potato slices over top of chicken trying to not have them thick on top of each other. Sprinkle Seasoned salt to taste.
7.
Bake for at least 1 hour. Stir the potatoes once or twice. When the potatoes are cooked to your liking, it is done.
