Plantain Chips

Plantains are an awesome alternative to regular chips. I like them best with guacamole.

Ingredients

Greenish Plantains

tbls Coconut oil
1
/2 tsp. Salt
Directions
1.
Preheat oven to 400
2.
Thinly slice plantains diagonally (I've tried this on a mandoline and it works pretty well, but I would suggest refrigerating the plantains first)
3.
Toss plantains with about a tablespoon of coconut oil. Sprinkle with salt.
4.
Spread plantains over 2 baking sheets covered with parchment paper
5.
Bake for about 20 minutes, or until starting to get crispy and brown.
6.
Once one side is brown, flip over to brown the other.
7.
Watch them closely, pulling the thinner ones that are done first.
8.
Once all are light brown and crisp, take them out and sprinkle with salt.
