Artichokes

Ingredients
2-4
artichokes (depending on how large your pot is) recipe based on 2
water
2
or 3 garlic cloves
1
tbsp vinegar per 2 artichokes
2
tbsp Vegetable Oil
Directions
1.
Cut the bottom of the artichoke so it sets flat in pot.
2.
Place each artichoke under running water to clean between the leaves.
3.
Slice garlic cloves thinly and place sporadically between leaves.
4.
Pour vinegar and oil into 3" of water in pot.
5.
Place artichokes in water.
6.
Bring to a fast boil and simmer for 2 hours.
7.
Check water during cook time to maintain 3" of water in pot
8.
Before serving, test leave to make sure it is soft and tender

Sauce:

1 Cup Mayonnaise

1/2 fresh lemon juiced
12.
mix and serve as a side to dip the leaves in.
