Macadamia Salmon Salad

This recipe combines a variety of healthy fats and fresh zucchini to give you a meal that is simple and satisfying. You could also use this combination as stuffing in grilled portabello mushrooms.

large frozen or fresh salmon filet (wild-caught)

fresh zucchini, grated

tbsp macadamia nut oil

tsp garlic powder
juice of one lemon
feta cheese (optional)
Directions
1.
Bake salmon filet for 30-35 minutes. When it is cooled, remove the skin and flake into pieces with a fork. In a separate bowl, incorporate all remaining ingredients together. Add the salmon and stir with a fork until you get desired consistency.
