Sauteed Chicken & Greens

A flavorful medley of chicken breast and fresh greens make this a healthy meal choice. The sauce adds an extra kick!

Ingredients

tbsp garlic, minced
1
tbsp coconut oil
2
cups spinach
1
cup broccoli florets
juice of one lemon
3
tbsp dijon mustard
8
ozs chicken breast, grilled or baked
Directions
1.
In a skillet over medium heat, sauté the garlic in the coconut oil until it starts to brown. Add the cooked chicken breast and broccoli florets. Let this cook for 2-3 minutes before adding the spinach. Reduce heat to medium-low. Add the dijon mustard and stir everything together. Remove from heat when spinach leaves have cooked down.
