Tagalong Cookies

Ingredients
1
cup all purpose flour
1/4
tsp salt
1/2
cup unsalted butter, softened
1/2
cup granulated sugar
1/2
tsp vanilla extract
1
large egg yolk
1/4
cup creamy peanut butter, slightly melted
4
powdered sugar
1
vanilla
1
milk
1
package chocolate melting candy, melted (add 1/4 cup of shortening to the candy if thinning is desired)
Directions
1.
Preheat the oven to 350?
2.
Combine the flour, salt, butter, sugar, vanilla extract, and egg yolk in a stand mixer, using a paddle attachment. Dough will be crumbly at first, but it will come together.

Scoop out 1 tablespoon of dough and quickly roll into a ball.
4.
Insert stick into dough. Place on parchment lined baking sheet and flatten with the greased bottom of a glass.
5.
Bake at 350 degrees for 20-25 minutes until firm in the center. Allow cookies to cool.

Microwave peanut butter for about 10 seconds until slightly melted.
7.
Add 4 tablespoons of powdered sugar, a splash of vanilla, and 1 tablespoon of milk to the bowl. Using a hand mixer, mix until smooth. Add more powdered sugar or milk to your liking.
8.
After the cookies have cooled completely, dip the front of each cookie in the peanut butter filling. You may find it easiest to “scrape” the front of the cookie across the filling and up the side of the bowl.
9.
Set the cookies on wax paper and put them in the freezer for about 30 minutes.
10.
Melt the chocolate melting candies in a bowl by following the directions written on the package.
11.
Dip the cookie pop in the melted chocolate. Tap the excess off on the side of the bowl.
12.
Lay cookies on wax paper to cool and harden.
