Miso Broth With Prawns

Ingredients

spring onions - thinly sliced

cm piece of fresh root ginger - peeled and finely chopped
1/2
of 1 large red chilli - deseeded and thinly sliced

liter fish or vegetable stock

tbsp Chilled Miso
2
tbsp Mirin (Japanese Cooking Wine)

tbsp Soy Sauce

gr Pak Choi - thinly sliced

tbsp Coriander

gr Frozen Cooked Peeled Prawns - thawed and rinsed
Directions
1.
Put the white parts of the spring onions into a saucepan with the ginger, chilli and stock.
2.
Add the miso, mirin and soy sauce, stir and bring to the boil, then reduce the heat and simmer for 5 minutes.
3.
Stir in the green parts of the spring onions, the pack choi, coriander and prawns and cook together for 2-3 minutes or until the pack choi has just wilted.
4.
Ladle into 6 bowls and serve.
