Mimi's Stuffed Potatoes

A staple especially for the holidays!

Ingredients
4
potatoes
4
oz cream cheese room temperature
4
oz sour cream room temperature
1/2
stick of butter room temperature
1/4
cup milk
1/4
jarlsberg cheese grated
2
tbsp onion in small Cuisinart to chop finely
sea salt & pepper to taste
paprika (for top of finished potatoes)
garlic salt to taste
parsley & chives (for decoration)
Directions
1.
Bake potatoes until fork goes through (do not over cook)
2.
Cut in half and scoop out 1/2 of each potato.
3.
Place cream cheese, sour cream, butter, milk, cheese, onion and spices to taste. Add the hot potatoes and mix well (not too runny).
4.
Place potatoes on foil in pyrex dish. Sprinkle with Paprika and parmesan cheese.
5.
Add Parsley and chives to decorate.
6.
At this point the potatoes can be placed in refrigerator or frozen.
7.
Reheat at 350 before serving.
