Coral And Jade Chicken

This was my first attempt at a Chinese type recipe and I still love it. Serve over rice. I used a wok but a large pan similarly shaped should do.

Ingredients

cup boned chicken breast (1/2 " cubes)
marinade

tsp salt

egg white
pinch cayenne pepper
1/4
tsp sugar
2
tsp cornstarch
3
slices ginger root
1
garlic clove
fresh mushrooms sliced
1/2
cup green pepper
1/2
cup red pepper
1
cup pineapple tidbits
1
small can water chestnuts sliced
1
small can bamboo shoots
2
scallions sliced
1
cup pea pods
4
tbsp peanut oil
cashews
almonds
sauce
8
tbsp soy sauce
4
tbsp Sherry
2
tsp sugar
2
tsp cornstarch
Directions
1.
Mix chicken with marinade and let sit for at least 15 minutes.
2.
Heat oil in wok. Blanch chicken until it turns white - Remove!
3.
Reheat wok and brown ginger & garlic. Discard.
4.
Stir fry mushrooms, peppers, pineapple, bamboo shoots, water chestnuts, and pea pods.
5.
Add green onion & chicken
6.
Thoroughly mix sauce mixture and add to wok.
7.
Garnish with almonds and cashews.
8.
Serve over rice.
