Award Winning Chili!

November 1, 2019. First annual chili cook-off. This recipe won the judges approval and took first place! Tom declared this "The best chili I've ever had!" and was found digging into the leftovers for days after the party!

Ingredients

Anaheim chiles, roasted, peeled, chopped.

poblano chiles, roasted, peeled, chopped.

oz bacon, cut crosswise in 1/4" strips and sauteed until almost crisp. Reserve 6 Tbl bacon fat.

tbsp oil

red bell peppers
1-2
jalapeno peppers, seeds removed, finely chopped

yellow onions, diced
6
tbsp minced garlic
1
lb boneless beef chuck, cut into 1/2" cubes
2
lb ground beef
1
lb sweet Italian sausage (if desired)

tbsp ancho chili powder
1
tbsp chipotle chili powder
1
tbsp mexican chili powder

tsp ground coriander
2
tsp cumin
2
tsp granulated garlic
2
tsp granulated onion
2
tsp paprika
2
tsp salt
2
tsp black pepper
2
cups tomato sauce
8
oz tomato paste
12
oz favorite beer
1
cup chicken stock
1
can black beans with juice
1
can kidney beans with juice
1
can pinto beans with juice
Directions
1.
Preheat oven to broil.
2.
Roast chilies on cookie sheet directly under broiler for 15-20 minutes. Turn peppers every five minutes, until skins are 75% blackened on all sides.

Place chilies immediately in paper bag and close up tightly. Let steam for 20 minutes until skins are loose and easy to peel off. Remove skins and seeds and chop.

Add reserved bacon grease to pot over medium high heat.
5.
Add chopped chiles, red pepper, jalapeno, and onions. Cook for 5 minutes until vegetables start to become translucent.
6.
Add garlic and cook 1 minute.
7.
Remove vegetables from pot and set aside.
8.
Add cubed beef to pot and cook until lightly browned on all sides.
9.
Add ground beef and sausage and cook until meat is no longer pink.
10.
Return vegetables to the pot with meat along with the reserved crisp bacon.
11.
Add all spices and cook, stirring for 1 minute.
12.
Add remaining ingredients, cook and stir until well combined and boiling.
13.
Lower to simmer and cook uncovered for 2 hours.
14.
Serve with shredded cheese, sour cream, chopped green onion, cilantro, and chips or cornbread.
