Spaghetti Squash Kugel

This recipe is from the Mishpacha's Pesach edition. We make it on Pesach (of course), but we like it so much that we even make it during the year.

Ingredients

medium spaghetti squash
3/4
cup sugar 1/4 c oil
3
eggs
3/2
tbsp cornstarch
1/2
tsp salt
1/4
tsp black pepper
Directions
1.
Cut spaghetti squash in half width-wise. Spoon out all seeds and place face down in a baking pan. Bake at 375 for approximately 1 hour. (Alternatively, spaghetti squash halves can be cooked in the microwave in 8-10 minutes.)

Preheat oven to 350.

Scoop out spaghetti squash into a large bowl. Drain any excess liquid.
4.
In a small saucepan, dissolve the sugar in the oil. Bring to a low simmer, stirring constantly until the mixture turns an amber color.
5.
Pour the sugar mixture over the spaghetti squash and mix well.
6.
Add remaining ingredients. Mix well.
7.
Pour batter into a 9 in round pan and bake in the preheated oven for about 45-60 minutes, until golden.
