Classic Peanut Butter Cookies

This is a delicious classic recipe for peanut butter cookies. Not too low in sugar and fats, but at least there's a fair amount of protein to make these cookies somewhat "healthy".

cup oil

cups peanut butter
1/2
cup white sugar

cup packed brown sugar

eggs
1 3/4
cups flour

tsp baking powder
1/2
tbsp baking soda
1/2
tsp salt
Directions
1.
Preheat oven to 375.

Cream together oil, peanut butter, and sugar in a mixer. Beat in eggs.
3.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter.
4.
Roll into 1-inch balls and place on baking sheets. Flatten each ball with a fork, making a criss-cross pattern.
5.
Bake for about 10 minutes, or until cookies begin to brown.
