Easy Lemon Cake

Ingredients

Yellow or vanilla cake mix
1
Package instant lemon pudding mix
3/4
cup canola or vegetable oil
3/4
cup water
4
eggs, beaten
Glaze
2
cups confectioners sugar
2
tbls melted butter
2
tbls water
1/3
cup lemon juice
lemon zest (optional)
Directions
1.
Combine cake mix and pudding mix in large bowl, stir to incorporate mixes. Add beaten eggs, oil and water; mix well with electric mixer.
2.
Pour batter into buttered Bundt pan (or 13x9 baking pan) and bake at 350 degrees for 35-40 minutes (or until toothpick in center comes out clean).
3.
Prepare glaze: combine all ingredients and stir until smooth.
4.
Immediately upon removing, poke holes through cake with skewer and pour glaze over cake. Dust with powdered sugar (optional).
