Couscous With Cucumber Dill And Feta

Couscous salad with lemon dill and feta cheese. Refreshing for hot days and easy to store for several days.

Ingredients

cups water

tbsp extra virgin olive oil

tsp salt
1
large garlic clove, minced
1
(10 oz) box whole wheat couscous
1 2/3
cup grape or cherry tomatoes, halved (about 1 pint)
1 1/2
cups diced English cucumber
1/3
cup chopped green onion
1/3
cup fresh lemon juice
2
tbsp chopped fresh mint
1
tbsp chopped fresh dill
1
(4 oz) package crumbled feta cheese
Directions
1.
Combine first 4 ingredients in a medium saucepan; bring to a boil.
2.
Gradually stir in couscous.
3.
Remove from heat.
4.
Cover and let stand 5 minutes.
5.
Fluff with a fork; cool.
6.
Combine couscous, tomatoes, and next 5 ingredients (through dill) in a large bowl; toss well.
7.
Add cheese.
