Beef Broth For Minestra Con Brodo

One of the Grandkids favorite recipes! A visit to Nonna's always means a meal of Minestra and French Fries.

Ingredients

beef shanks
2
soup bones with marrow
1
whole onion
2
peeled carrots
2
ribs of celery
2
tbsp per person acini di pepe
5
sprig parsley
1
tbsp tomato paste
1
tbsp salt
1/2
tsp pepper
Directions
1.
Fill a 4 quart pan with water and put all ingredients inside
2.
Bring to a full boil and then reduce heat to steady medium boil and let it cook for 50 Minutes to one hour.
3.
Intermittently with a skimmer remove fat that forms on top while cooking
4.
When broth cools down strain broth from meat and the veggies
5.
Save meat and veggies for salad with vinegar, oil, salt and peper.
6.
Drain broth with a tight strainer into tupperware bowls for saving or use what’s needed for Minestra and freeze the rest.
7.
For Minestra boil the broth and cook small Acini Di Pepe (2 Tbs x person raw)
8.
Adjust salt and serve with grated Parmesan
9.
Note: for Straciatella, break an egg and scramble it into the boiling minestra soup just before you serve it.
