Stuffed Flounder

Mom loves flounder. And coincidentally two days before I added this recipe Mom had asked me if I like eating flounder, or stuffed flounder. I do, although Katie's not a fan of fish, except salmon or shell fish and crustaceans.

Ingredients
3
medium onions chopped
1
small green pepper
1/2
bar of butter or margarine
4
cup bread crumbs (not 4 cups, but the brand 4C)
1
can (8 oz) of tomato sauce
1
lb flounder, filleted
Directions
1.
Preheat oven to 375 degrees
2.
Saute onion and green pepper in the butter or margarine until soft.
3.
Add salt and pepper to taste.
4.
Add enough bread crumbs to create a stuffing consistency.
5.
Coat backing dish lightly with small amount of tomato sauce.
6.
Place 1 layer of flounder.
7.
Cover with stuffing mixture.
8.
Place second layer of flounder.
9.
Pour remaining sauce on top.
10.
Bake uncovered for 30 minutes or until fish is done.
