Beetroot Hummus

Humus is a snack high in protein. For those in recovery craving sugary foods or want to munch on crisps this is an excellent replacement. This beetroot hummus has healthy fats for the body. As well as this recipe high in antioxidants which fight off free radicals. Antioxidants help the production of serotonin in the brain which is especially helpful for those in recovery.

Ingredients
400
gr can chickpeas, drained
200
gr pack cooked beetroot
2
tbsp tahini
zest 1 lemon, plus juice ½
1
small garlic clove, roughly chopped
4
tbsp Greek yoghurt
3
tbsp extra virgin olive or rapeseed oil
vegetable sticks to serve
Directions
1.
Put the chickpeas, tahini, beetroot, lemon zest and juice, garlic, yoghurt and 2 1/2 tbsp of oil into a blender.
2.
Season well as you like and blend, scraping down the sides after 30 secs or so, then blend again until smooth.
3.
Transfer to a pot or jar with a lid, drizzle with the remaining oil and scatter over the pine nuts. Serve with crunchy vegetable sticks.
