Ratatouille

Sabrina's favorite recipe!

Ingredients
1/4
extra virgin olive oil
1
medium eggplant cubed
1
medium onion chopped
1
garlic clove minced
1
green zucchini cubed
1
yellow squash cubed
2
bell peppers cubed
1
can (14 oz) diced tomato
1
tsp tsp of salt
1/4
tsp pepper
1
bay leaf
dash of italian seasoning
Directions
1.
Saute’ the onion and garlic in Olive oil.
2.
Add eggplant and sauté for 3 minutes
3.
Add peppers and sauté for 3 minutes
4.
Add zucchini and sauté for 3 minutes
5.
Combine the can of tomatoes, salt and pepper, bay leaf and sprinkle some italian seasoning
6.
Cook all for 20 minutes on medium low heat stirring often. Careful not to let it stick.
7.
You can add a chicken bullion cube for more flavor.
