Stuffed Shells With Ricotta

Besides homemade Prosciutto, this is Gianmario's (Coosie Cat) favorite recipe.

Ingredients
1
box of jumbo shells (Mueller is fine)
2
lb part skim ricotta cheese
2
whole eggs
1/2
cup grated Parmesan
16
oz shredded mozzarella
1/2
tsp salt
1/4
pepper
1
sprig Basil or Parsley chopped (optional)
1
cup Bolognese sauce (See Bolognese recipe)
Directions
1.
Combine Ricotta, eggs, salt, pepper, and of 8 oz mozzarella in mixing bowl.
2.
Cook shells in boiling water, drain and keep in lukewarm water while you fill them.
3.
In a 9x13 baking dish spread some Bolognese sauce to cover bottom
4.
Fill the shells with one full Tbs of the Ricotta mix
5.
When done cover the shells w/the remaining sauce and mozzarella
6.
Bake at 350 degrees for 25-30 minutes or till cheese is melted. Can freeze for future use.
