Manicotti

A savory dish that can be cooked right away or frozen for future use.

Ingredients
1
box of Manicotti
1
cup Bolognese sauce (See Bolognese recipe)
2
lb part skim ricotta
2
eggs
1/2
cup of Parmesan
8
oz shredded Mozzarella
Directions
1.
Combine Ricotta, eggs, Parmesan, some Mozzarella, little salt and pepper
2.
Cook Manicotti in 1/2 tsp salt
3.
Prepare 9x13 baking dish by covering bottom with sauce
4.
Drain them and cut them lengthwise
5.
Fill the cut pasta with the Ricotta mix and place them face down in a 9x13 baking dish
6.
When done, cover the Manicotti with some sauce and top with Mozzarella
7.
Bake at 350 degrees for 35 minutes

Or freeze for later use.
9.
(Note: every time you have a mix/fill of cheeses for baked pastas you have to remember that all cheese have lot of sodium already. Therefore, be very cautious with the salt since sauces are also full of salt)
