Broccoli Soup

Really easy and really tasty

Ingredients
1/2
large onion, peeled and chopped
1
small potato, peeled and roughly chopped
150
broccoli (about 1/2 a head), roughly chopped
1/2
liter chicken or vegetable stock
pepper
Directions
1.
In a large saucepan, cook the onion in a little olive oil for about 4-5 minutes until just soft. Add the potato and the stock and simmer for about 10 minutes until the potatoes are tender.

Add the chopped broccoli and cook for 3-4 minutes until just tender, but still bright green.
3.
Turn off the heat. Use a hand-held blender A LOT until smooth. This takes ages sometimes! Season with pepper.
4.
Put the heat back on and reheat the soup until just boiling. Serve and enjoy :D
