Smoked Salmon With Potato Salad

Easy and tasty salad which makes enough for lunch the next day too.

Ingredients
450
gs potatoes
small bunch of tarragon, chopped
1/2
red onion, peeled and finely chopped

tbsps olive oil
1
tbsp p red wine vinegar
6
spring onions, finely sliced
50
gs salad leaves
175
gs smoked salmon (trout works well too but we just use value salmon trimmings from Sainsburys)
few drops of salad cream
Directions
1.
Bring a pan of water to the boil. Cook the potatoes in the water for about 10/15 minutes until tender. Drain them and rinse under cold water until cool enough to handle. Cut into slices or chunks.
2.
Mix together the tarragon, red onion, vinegar and oil to make the dressing.
3.
Pour the dressing, potatoes, spring onions and salad leaves into a bowl and mix well.
4.
Top with the fish, add the salad cream, mix it all and then serve and enjoy :D
