Minestra E Fagioli

Simple recipe that can be served as the entree or as a side with salad.

Ingredients

tbsp olive oil

onion chopped
1
tsp tomato paste
3/4
cup Tubetti or Ditalini pasta
2
cans pinto beans
3/4
tsp salt
1/4
tsp crushed pepper
1
chicken bouillon
Directions
1.
In 3 quarts casserole warm up olive oil

Sauté onion
3.
Add tomato paste, salt and pepper and let cook for 1-2 minutes
4.
Add 2 quarts of water and bring to boil
5.
Add bouillon and cook the noodles
6.
Drain and rinse pinto beans and add them to soup
7.
Adjust salt if necessary
