Risotto

Classic Risotto

Ingredients
1
(12 oz) bag arborio italian rice
2
tbsp butter
2
tbsp olive oil
2
cloves garlic minced
1/2
cup White wine
3
or more cans chicken broth
1
(2 tsp) salt
some pepper
parmesan cheese to garnish
Directions
1.
In heavy 3 quart casserole melt butter
2.
Add Olive oil and sauté garlic till golden, (don’t burn it)
3.
Add bag of rice and stir to flavor it
4.
Add 1/2 c white wine and stir frequently w/wooden spoon till evaporated
5.
Add one can of chicken broth and stir almost steadly till dry
6.
Add salt and pepper, keep adding broth until all absorbed into rice. Typical cooking time is approximately 20 minutes or more.
7.
When rice tastes done add some Parmesan cheese to serve it.
8.
Note: You can Sauté chopped zucchini or mushrooms for veggie Risotto or cooked baby shrimp for seafood risotto.
