Apple Blueberry Muffins

These hearty muffins are packed with fruit! Even my kids who will only eat muffins that have chocolate chips inside will eat these muffins. I like to use Wyman's frozen wild blueberries because they are small and flavor-filled.

Ingredients

cups flour

cup brown sugar

cup white sugar

tsp baking powder

tsp cinnamon
4
large eggs
1 1/2
cups almond milk
1
cup oil
2
tsp vanilla extract
2
large Golden Delicious apples
3
cups blueberries
Directions
1.
Preheat oven to 350. Grease 12 Texas muffin cups with oil.

In a large bowl, combine flour, sugars, baking powder, and cinnamon.
3.
In mixer bowl, combine eggs, milk, oil, and vanilla. Slowly add flour mixture to this bowl.
4.
Peel apples, and chop into small pieces. Add to the batter, along with the blueberries. Stir together to combine.
5.
Divide batter into 12 Texas muffin cups, and bake in preheated oven for 35-40 minutes, or until a toothpick comes out clean.
