Healthy Falafel Balls

These falafel balls are baked instead of fried, but they are still delicious. If you don't mind the extra fat, go ahead and fry them instead. This is a tripled recipe because these falafel balls freeze really well, and once I am doing the work I might as well put two suppers in the freezer... Serve with pitas, techina, and Israeli salad, of course.

Ingredients

cup chopped onion

cans (15 oz) garbanzo beans
1
tbsp dried parsley
3/4
tsp garlic powder
1
tbsp cumin
1
tsp salt
1
tsp baking soda
3
tbsp flour
3
eggs
Directions
1.
Preheat oven to 400.

Chop garbanzo beans in a blender until almost pasty. Add remaining ingredients and mix well to combine.
3.
Grease a large cookie sheet with oil. Form falafel batter into 1-inch balls and place in rows on cookie sheet, leaving a little room in between each one.
4.
Bake in preheated oven for 15-20 minutes, flipping falafel balls halfway through cooking time.
