Italian Beef For Sandwiches

Ingredients
3
cups water
I t salt
I t ground pepper
I t dried oregano
I t dried basil
I t onion salt
I t dried parsley
I t garlic powder
I bay leaf
I (.7 oz) pkg dry Italian-style salad dressing mix
I (2-5 Ib) rump roast -depending on your family size
2
green bell peppers, sliced
I onion, sliced
I pkg mushrooms, sliced
olive oil plus 2 T butter for sautéing
Provolone cheese
hoagie-style bread
Directions
1.
Combine first 10 ingredients in saucepan. Stir well and bring to a boil.
2.
Place roast in slow cooker and pour salad dressing mixture over the meat. Cover and cook on low for10-12 hours or high for 4-5 hours.
3.
When done, remove bayleaf and shred meat with a fork. You can also save the juice in the cooker for au jus sauce for your hoagies.
4.
Saute bell peppers, onion and mushrooms in olive oil and butter until tender.
5.
Inside hoagie, place meat, peppers, onions, mushrooms and top with provolone.
6.
Toast sandwiches at 400 degrees for about 5 minutes or until cheese is melted.
