Chicken Cordon Bleu

This dish has been a traditional meal on Christmas Eve. It goes great with red mashed potatoes and a beautiful salad with homemade rolls. Oh yes and don't forget a yummy dessert! I think your family will love this.

Ingredients
4
skinless chicken breasts pounded flat
1
cup flour
2
eggs beaten
I jar of bleu cheese dressing store refrigerated (Look in the produce section of store)
1/4
cup parmesan cheese
4
slices ham
4
slices swiss or provolone cheese
1
can cream of chicken soup
1
cup sour creamParsley flakes
Toothpicks
Cooking oil
Directions
1.
Pound each chicken breast flat with rolling pin or flat side of meat tenderizing tool.
2.
On top of each chicken breast, layer a slice of ham and cheese.
3.
Roll up chicken w/ham and cheese on top and secure with toothpick. (Usually takes two or three.)
4.
Roll chicken in flour then roll in 3/4 cup dressing mixed with beaten eggs, then roll in parmesan cheese.
5.
Fry in pan of hot oil until both sides are a golden brown color.
6.
Place chicken in a 9x13 baking dish.
7.
Mix together cream of chicken, sour cream, and parsley flakes.
8.
Pour over chicken and bake uncovered for 45 min at 350degrees.
