Watercress, Bacon And Potato Bake

This works really well with spinach too.

Ingredients
3
slices unsmoked bacon, roughly chopped
100
ml crème fraiche
75
ml vegetable stock
1 1/2
garlic cloves, crushed
375
gs new potatoes, scrubbed and halved
1/2
bag of watercress, roughly chopped
25
gs Gruyere cheese, grated
splash of worcestershire sauce
Directions
1.
Cook the bacon in a frying pan for 3-4 minutes, stirring until browned.
2.
Add the crème fraiche, stir in the stock and add the garlic. Bring to the boil and then add the potatoes.
3.
Simmer and then cover and cook for 20-25 minutes until the potatoes are tender.
4.
Remove the lid and cover for 5 more minutes, stirring occasionally.
5.
Remove from the heat and stir in the watercress. Pour into a ovenproof dish and top with the cheese. Splash with worcestershire sauce.
6.
Place under a pre-heated girl and cook for 3-4 minutes until golden.
7.
Serve with bread and enjoy!
