Fajitas

This can have chicken added into it to make it more filling. Tabasco can be added to heat it up a bit too.

Ingredients

cans red kidney beans, drained and rinsed

cans chopped tomatoes

cans sweetcorn, drained

cans refried beans

red onion, finely chopped

garlic clove, crushed
olive oil
chopped fresh coriander
4
flour tortillas

Philadelphia cheese
small amount of cheddar cheese, grated
Directions
1.
Fry the onion in the olive oil for a few minutes until softened, add the garlic and then cook for 2 more minutes.
2.
Add the kidney beans, chopped tomatoes and sweetcorn and cook for 4-5 minutes.
3.
Meanwhile, follow the instructions on the can to cook the refried beans.

Add some coriander to the beans, tomatoes and sweetcorn and cook for a final 2-3 minutes.
5.
Warm the tortillas in the oven. When warm spread some of the Philadelphia onto each tortilla. Put some of the refried beans on top, followed by the tomato mixture and then sprinkle on some cheddar.
6.
Put the fajitas up and then tuck in and enjoy!
